The search for qualified personnel has become a major problem for restaurants and hotels. According to data from FIPE, the Italian Federation of Public Retail and Catering Businesses, in the quarter from September to November the search for specialized chefs exceeded 15 thousand units, while for cook’s assistants it reached 17 thousand. In general, regarding hotels and restaurants, 100,000 professionals are needed.
We will try to understand how the pandemic has changed the world of work in the field of food service and hospitality and what the differences or similarities among the various continents are. Regarding training, skills development, attractiveness and innovation, we will also try to understand how best to promote the union between supply and demand in the immediate future as well as what medium-long term actions to take in order to solve a problem that seems to have become structural.
